D’Limon Bakery in Liberal fails 2nd food safety inspection in a month; “The cook was not happy about me being there and was not cooperative.”

The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 6, 2020. This was a follow-up inspection after the bakery failed an inspecton with 8 violations on December 26, 2019. As a result of that inspection, and due to the severity of the specific violations the D’Limon Bakery was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 4 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • In the Berg cooler there was prepared on site: one container of red sauce, two containers of Menudo, one container of hot sauce salsa, two containers of barbacoa meat, and one container of enchilada meat with sauce. All of these items were not dated. As per the cook it was prepared on Saturday. This was not corrected on site. The cook was not happy about me being there and was not cooperative.
  • In the Berg cooler there was a gallon of milk opened without a date. As per the cook everything was from Saturday. This was not corrected on site.
  • In the kitchen area there was ready to eat bread and linseed stored in Sterilite containers. There were 4 containers of bread and one container of linseed. This was not corrected on site.
  • In the kitchen area there were four t-shirt bags with ready to eat bread stored in them. The cook said they are for an order. This was not corrected on site.
