Life Prep Academy Kitchen fails inspection, “chicken blood actively dripping onto the pumpkin pies”; 7 violations

The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on December 5, 2019. As a result of that inspection, and due to the severity of the specific violations Life Prep Academy was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The staff member was portioning raw pork into a pan on the stove. She then discarded her gloves and proceeded to touch a stirring utensil without washing her hands. COS educated the staff member and she washed her hands and took the utensil to the ware washing area for cleaning.
  • In the stand up cooler in the dry storage area there was a pan of cooked chicken that was not dated. The person in charge was unable to determine when the chicken was cooked. COS The chicken was discarded. In the stand up cooler next to the main area of the kitchen there was an open gallon of milk dated 11/23. The person in charge stated the date was the purchase date but was unable to determine when the milk was opened. COS The milk was discarded.
  • In the stand up cooler there was a pan of raw chicken stored above RTE pumpkin pies and cooked RTE ham casserole. There was chicken blood actively dripping onto the pumpkin pies and the ham casserole. COS The pumpkin pies and ham casserole were discarded, the blood was poured off and the chicken was moved to the bottom shelf below RTE foods.
  • In the stand up cooler there was a pan of raw chicken stored above raw beef burger. The chicken was actively leaking blood onto the packages of raw burger. COS The raw chicken was moved to the bottom shelf and the raw burger was moved above the chicken. The packages of burger were wiped clean with sanitized wiping cloths.
  • In the stand up cooler next to the main kitchen area there was an open container of commercially prepared spaghetti sauce that was not dated. The person in charge confirmed the sauce had been opened over 24 hours prior on 12/4. COS The spaghetti sauce was dated.
  • In the stand up cooler by the main cook area there was an open container of salsa that was not dated. The person in charge stated the salsa was opened over two weeks prior. COS The salsa was discarded.
  • In the stand up cooler in the dry storage area there were two cucumbers stored in direct contact with a t-shirt style thank you bag. COS The cucumbers were removed from the thank-you bag and placed in a food safe bag.
  • Under the sink in the chemical storage area there were two spray bottles of pink liquid that was not labeled. The person in charge identified the liquid to be Quat sanitizer. COS The spray bottles were labeled.
