324 Speakeasy in Manhattan fumbles restaurant inspection;  using canvas bag to crush ice, no hand soap at the kitchen hand washing sink

The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/13/2020. As a result of that inspection, and due to the severity of the specific violations the 324 Speakeasy was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 6 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • A canvas bag is being stored on top of ice in the ice bin behind the bar. This bag has ice inside the bag and is used to crush ice with a mallet. Person in charge said the bag is then stored under the bar counter, on a hook attached to the bar end between the wall and a metal keg container. Person in charge said they bag is washed weekly and gloves were not used to handle the bag. Corrected on Site: bag removed, top layer of the ice in the bin was discarded. KDA111 provided education on crushing ice mechanically or purchasing crushed ice.
  • The following foods are in the refrigerated prep table, obtained from a local restaurant that is not a processor: Garlic bread Bacon wrapped jalapeno poppers Roasted pepper sauce Bruschetta topped w/cream cheese. Person in charge said these foods are purchased at a discounted rate, and are for resale to customers when ordered. Corrected on Site: foods returned to local restaurant.
  • A bowl of apples and citrus fruits are stored on the bar without protection from possible contamination. Corrected on Site: bowl moved to counter behind the bar.
  • No test strips for Quaternary Ammonia used for wiping cloth spray bottle sanitizing solution and NO test strips for Chlorine used in ware washing machine behind the bar. **NOT Corrected on Site**
  • There is no hand soap at the kitchen hand washing sink. Corrected on Site: person in charge placed a small container with soap at the hand washing sink.
  • No paper towels or other hand drying provisions at the Woman’s bathroom handwashing sink. Corrected on Site: person in charge replenished paper towels.
