Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 3/4/2020. As a result of that inspection, and due to the severity of the specific violations Steve’s Villa Capri was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • In the refrigerator located in the front service area, opened cottage cheese had pink mold all over the top and it was not dated. Corrected on site: cottage cheese was voluntarily discarded.
  • In the refrigerator located in the kitchen, a carton of raw shell eggs on a wire rack was stored above a closed jar of pickles and a covered jar of green olives. No leakage. Corrected on site: eggs moved to another place. In the refrigerator located in the kitchen, raw chicken in a metal pan covered with plastic wrap was stored next to and touching a metal pan covered with plastic wrap, with cooked breaded eggplant. No leakage. Corrected on site: raw chicken moved to the bottom. Discussed options for rearranging refrigerator.
  • On the make table the following items temperature was not in compliance: blue cheese dressing held at 46 f, ranch dressing held at 46 F and thousand island dressing held at 45 F. Under the make table in the reach in cooler, salad mix temperature was at 55 F. Person in charge said items had been in make table and reach in cooler more than 4 hours. Atmosphere temperature of reach in cooler was 53 F when checked. Corrected on site: dressing and lettuce was voluntarily discarded. All other items in the reach in cooler and make table were not potentially hazardous food. Person in charge will not use unit until repair is done.
  • In the kitchen refrigerator, prepared on site cooked pasta, prepared on site cooked breaded egg plant, prepared on site lasagna, prepared on site mannicoti were not date marked. Person in charge said all these items were cooked on /3/3/20 at 12:00 pm. Time checked between 2:04 PM and 2:06 PM, > 24 hours. Corrected on site: items date marked. In the kitchen refrigerator, a pan of cooked egg plant was not date marked. Person in charge said egg plant was cooked on 2/29/20. Corrected on site: pan date marked.
  • In┬áthe kitchen refrigerator, sliced ham and sliced turkey were opened and were not date marked. Person in charge said they were open on 3/3/20 in the morning. Time checked was 2:00 PM. Corrected on site: items were date marked. In the front refrigerator, purchased cheesecake was not date marked. person in charge said cheesecake was opened on 2/28/20. Six serving of salad mix salad were not date marked. Person in charge said lettuce was opened on Saturday 2/28/20. Corrected on site: cheesecake was dated. Person in charge decided to discard of salads.
  • In the front service area refrigerator, cannoli mix was prepared on 2/11/20 was held > 7 days. Corrected on site: cannoli mix was voluntary discarded. In the kitchen refrigerator, cooked chicken bread prepared on 2/26/20, cooked pasta prepared on 2/26/20, were held more than 7 days. Today is 3/4/20. Corrected on site: cannoli mix and cooked pasta voluntarily discarded. In the front refrigerator, slices of purchased tiramisu was not date marked. Person in charge said tiramisu was removed from freezer on 2/25/20, > 7 days. Corrected on site: tiramisu voluntarily discarded.
  • In the kitchen, one rubber spatula was cracked at the food contact surface. Corrected on site: spatula removed from service.
  • In the back dish area, one squeeze bottle with a clear blue liquid was not labeled. Person in charge said liquid was dish soap. Corrected on site: bottle was labeled.
