Sharks Restaurant & Billiards in Shawnee fouls inspection; E&J brandy was being stored with visible winged insects floating inside, 13 violations

The Kansas Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/18/2020. As a result of that inspection, and due to the severity of the specific violations Sharks Restaurant & Billiards was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 13 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • At the bar, one bottle of E&J brandy was being stored with visible winged insects floating inside. COS = Liquor discarded In the walk in cooler(WIC) one open container of pesto was being stored with visible mold. In the walk in cooler(WIC) one open container of half-n-half was being stored without an open date. In the walk in cooler one container of cooked meatloaf was being stored without an prep date. In the walk in cooler(WIC) one container of cooked mashed potatoes was being stored without a prep date. In the reach in cooler one open container of marinara was being stored without an open date. In the refrigerated prep table (RPT) one half sheet pan of stuffed mushrooms(cream cheese) was being stored without a prep date. Person in charge (PIC) said he had no idea when any of this was opened. COS = All items discarded.
  • In the dry storage room, one #10 can of kidney beans was being stored with severe dents to both seam (top and bottom). COS = Can removed for credit
  • On the expo line, in the steam table, one container of nacho cheese was holding at 104.7F. PIC said it had been out since 10:30am. Picture was taken at 11:38am. COS = Cheese removed and re-heated to 165F
  • In the RPT reach in cooler (RIC), one container of cooked chicken was being held without a prep date. PIC said it was cooked on 2-16-20. COS = Dated
  • In the RPT, (RIC), one open container of cottage cheese was being held without an open date. PIC said it was cooked on 2-16-20. In the WIC, one open container of milk was being held without a open date. PIC said it was opened on 2-14-20. In the WIC, one open container of mozzarella cheese was being held without an open date. PIC said it was opened on 2-15-20. In the WIC, one open package of Cream cheese was being held without a open date. PIC said it was opened on 2-15-20. COS = Dated
  • In the RPT, (RIC), one sheet pan of made on site mini burrito’s was dated as prep for 2-10-20. In the (RIC), one container of cooked Au jus was being held with a prep date of 1-3-20. In the walk in cooler (WIC), one container of mushroom filling (cream cheese) was being held with a prep date of 2-8-20. In the walk in cooler, one container of cooked, made on site Taco sauce was being held with a prep date of 2-4-20. Today is 2-18-20 which is over 7 days on all products. COS = All items discarded
  • The FE is using ROP for the following items: Raw beef, cooked beef, pork, chicken and vegetables. Inspector will include a HACCP template for ROP. PIC will not use this procedure until the HACCP plan has been approved
  • The menu has a reminder on the menu but each item that can be under cooked is not asterisked. ie: Burgers
  • In the dish area, stored as clean, approximately 10 plastic containers were being stored with visible sticker/food residue. The plunge dicer was being stored as clean with visible food debris on the FCS. One bus tub filled with container, equipment and utensils was being stored as clean with visible debris on the FCS of all items. COS = All items moved to dish
  • No soap was available at the bar hand washing sink for hand washing. Not corrected
  • No paper towels or other hand drying provisions at the bar hand washing sink. Not corrected
  • In the dry storage room, a hotel pan of Sterno chafing fuel was being stored directly over a stack of single use aluminum roasting pans. COS = Sterno moved
  • In both electrical rooms, in kitchen rodent bait bags are being stored directly on the floor without a tamper proof cover. not corrected
