Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an Follow-up retail food inspection on 3/6/2020. As a result of that inspection, and due to the severity of the specific violations Sakura was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • At the dish station, an employee was rinsing off dirty dishes and placed them into a dish rack which was then placed into dish machine. Without a hand wash he then proceeded to remove the clean dish rack from dish machine and started to remove the clean dishes. COS = Educated PIC in regards to hand washing and re-washed all dishes.
  • In the walk in cooler, one head of Napa cabbage and one head of leaf lettuce were being stored with visible mold.[repeat] COS = Products discarded In the walk in cooler, two packages of ROP tuna were being stored without a slit cut into package. Person in charge (PIC) said it was removed from freezer the previous night. COS = Slit cut into package
  • In the walk in cooler, two packages of raw tuna were being stored on a plastic tray, (no leakage) directly over a plastic container of sliced onions with a lid.[repeat] COS = Raw tuna removed from walk-in cooler.
  • In the walk in cooler, two packages of raw tuna were being stored on a plastic tray, (no leakage) directly over a plastic container of sliced onions with a lid.[repeat] COS = Raw tuna removed from walk-in cooler.
  • No parasite destruction paperwork is available for the raw fish products served in the FE.[repeat] not corrected
  • At the sushi bar, one rice cooker filled with rice was being held on TPHC but was not marked with time. PIC said it was made at 11:30am.[repeat] COS = Rice cooker marked with time
  • In the prep reach in cooler, cut sweet potato was being stored in a non-food grade (Sterlite) container. Food was in direct contact with the plastic.[repeat] COS = Sweet potato removed from container At the sushi bar, one non-food grade spray bottle was being used to store oil. COS = Spray bottle discarded
  • In the dish area, three plastic spatulas were being stored with scoring, gouges and tears in the FCS.[repeat] COS = Spatulas discarded
  • The water filter at the commercial ice machine is dated for 8-17-18. This is the last time it was replaced. Today is 3-6-20.
  • In the dish area, one working spray bottle was being stored with a yellow liquid inside but no label of common name. PIC said it was degreaser. COS = Labeled.
  • At the prep area, one open bottle of saline solution was being stored directly over Stored as clean dishes.(no leakage) COS = Saline solution removed
