Live roaches found during inspection of Overland Park Boston Market, 4 violations

The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on December 2, 2019. As a result of that inspection, and due to the severity of the specific violations the Boston Market-Overland Park was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 4 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Pico and corn salsa in make table-top without a date of prep on container. PIC was unsure of prep date. COS discarded Stuffing in walk in cooler without a date of prep on container. PIC stated it was to be thrown out the previous day but she was not here to discard the item. No date on container. COS discarded
  • Metal pans of raw beef meatloaf stored on sheet trays on a speed rack in walk in cooler with a bag of RTE ham sitting on one of the sheet trays. Ham was beside raw meatloaf as well as below the raw meatloaf. No leakage seen.
  • Carbonators (Coke in establishment are fitted with dual check valves, but are missing the intermediate vent on both carbonators. Left handout with PIC explaining what needs to be implemented on the portion in between the pump and the carbonator itself.
  • One live roach in between wash basin of 3 vat sink and wall. One live roach on right side of knife holder mounted on wall by 3 vat sink. Suspect roach frass on knife holder. Contracted pest control invoice from 11/25 presented with no activity seen on report.

*Frass refers loosely to the more or less solid excreta of insects, and to certain other related matter.
