The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 21, 2020. As a result of that inspection, and due to the severity of the specific violations the Brazil Academy – Brazilian Jiu Jitsu School was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 3 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • In the RIC at the cafe kitchen, two plastic containers of manufactured chicken Brazilian drumsticks were opened from their packages without dates. PIC did not know when they had been opened. COS: Discarded. In the RIC at the cafe kitchen, an opened carton of half and half and an opened carton of heavy whipping cream were stored on a shelf without an open date. PIC did not know when they had been opened. COS: Discarded. [REPEAT]
  • In the RIC of the prep kitchen, an opened carton of manufactured beef broth was dated from 1/8/2020 and has been held past 7 days (Today’s date is 1/21/2020). COS: Discarded.
  • Two live roaches (both near adult age) were seen in the corner of the kitchen counter in between two separate pieces of wood, just under the tiled countertop. This was an area where live roaches were previously seen by the inspector. PIC called the pest control company but their earliest availability is 1/23/2020. Not COS and a REPEAT.
