The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/19/2020. As a result of that inspection, and due to the severity of the specific violations the Hy-Vee Food Store on 63rd was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of XX violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • In the deli cooler, an open packaged of diced chicken was not date marked. Person in charge did not know the date it was opened. Corrected on site: chicken was voluntarily discarded. In the market place kitchen, on the make table, a pan with pico de gallo was not date marked. Person in charge didn’t know when pico de gallo was made. Corrected on site: pico de gallo was voluntarily discarded. In the marked place kitchen reach in refrigerator under the make table, a metal pan with cheese sauce was not date marked. Person in charge did not know when cheese sauce was made. Corrected on site: cheese sauce was voluntarily discarded. In the kitchen reach in cooler under the make table, two open cartons of heavy whipping cream were not date marked. Person in charge did not know when they were opened. Corrected on site: Whipping cream cartons were voluntarily discarded.
  • In the retail area deli display case, on a solid shelf, closed packages of raw bacon were stored next to and touching closed packages of fully cooked turkey smokeys. No leakage. On the same display case, on another solid shelf, closed packages of raw bacon were stored next to and touching covered trays of cheese slices and crackers. No leakage. Corrected on site: solid dividers were added to separate raw bacon from ready to eat items.
  • In the kitchen cooler, two covered metal pans of raw chicken were stored directly on top of a case of raw beef and touching two closed bags of raw pork. Corrected on site: cooler was rearranged. Chicken was moved and separated.
  • In the walk in cooler of the kitchen on a cart, fried chicken temperature was 60 F, baked chicken temperature was 53 F, and cooked corn temperature was 56 F. Person in charge said cart was out at room temperature earlier. Corrected on site: person in charge decided to discard of the all items.
  • In the make table, a pan with shredded lettuce was date marked 2/6/20. Person in charge said it was the incorrect date. Corrected on site: pan was marked with the correct date.` In the walk in cooler, prepared on site mashed potatoes was not date marked, and prepared on site potato salad was not date marked. Person in charge said mashed potatoes and potato salad were made on 2/17/20. Corrected on site: pans were date marked. In the kitchen area, on the make table closer to the pizza area, cooked pork, cooked chicken and cooked beef were not date marked. Employee said items were done on 2/18/20 at 9:30 AM. Picture taken at 10:45 AM, > 24 HOURS. Corrected on site: items were date marked.
  • In the deli department walk in cooler, five packages of deli meat (roast beef, 2 turkey breast, 2 black forest ham), were open and not date marked. Person in charge said packages were opened on 2/18/20 at 8:15 AM. Pictures were taken at 9:56 AM on 2/29/20. Corrected on site: packages were date marked. In the kitchen walk in cooler, two open packages of sausage were not date marked. Person in charge said he opened packages on 2/18/20 in the morning. Corrected on site: packages were dated.
  • In the deli department cooler, commercially prepared cheese ranch dip was date marked as opened on 2/9/20. Today is 2/19/20. Corrected on site: cheese dip was voluntarily discarded. In the kitchen on the refrigerated make table, a pan with diced tomatoes was date marked 2/9/20. Today is 2/19/20. Corrected on site: tomatoes were voluntarily discarded. In the kitchen reach in cooler under the make table, prepared on site spicy mayonnaise was date marked 2/10/20. Today is 2/29/20, > 7 days. Corrected on site: spicy mayonnaise was voluntarily discarded.
  • In the kitchen a rubber spatula had large cracks and chips on the food contact surface. Corrected on site: spatula was removed from service.
  • In the meat department, the meat grinder had dry meat debris on the grade part and other food contact surface. Employee said meat grinder hadn’t been clean. Corrected on site: meat grinder will be cleaned today. In the produce trim room, the interior of the microwave, on the ceiling, there is a significant amount of dry food debris. Debris could fall and drip into the food contaminating it. Not corrected on site. Person in charge said it ill get cleaned.
  • In the meat department, the meat grinder had dry meat debris on the grade part and other food contact surface. Employee said meat grinder hadn’t been clean. Corrected on site: meat grinder will be cleaned today. In the produce trim room, the interior of the microwave, on the ceiling, there is a significant amount of dry food debris. Debris could fall and drip into the food contaminating it. Not corrected on site. Person in charge said it ill get cleaned.
  • The hand sink located at the produce trim room, was blocked with a large rolling cart with several boxes on it. Corrected on site: cart was moved.
  • The hand washing sink located at the sushi preparation area had a metal pan and two knives in the basin. Corrected on site: dishes were moved. Education provided.
  • No paper towels or other hand drying provisions at the hand washing sink Located at the back area close to the meat department. Corrected on site: paper towel was provided.
  • In the storage area, bottles of Lysol wipes were stored in the same crated with twinkle cereal boxes. No leakage. Bottles of Lysol wipes were stored next to a package of crackers. No leakage. Bottles of hand soap in a box, were stored on top of a case of mac and cheese packages. A bottle of hand soap was stored directly on top of bags of brown sugar. No leakage. Corrected on site: all chemicals removed to a correct place.
  • In the retail area, bottles of lighter fluid was stored next to and touching bottles of garlic salt and above containers of BBQ rub. No leakage. Charcoal lighter bottles were stored on the top shelf above seasoning containers. Person in charge will have shelves re-arranged.
