Hereford House in Shawnee bumbles inspection;  Liquor bottle with 6 small winged insects, 15 small winged insects landing on bottles, insects observed on walls, clean dishes

Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 3/18/2020. As a result of that inspection, and due to the severity of the specific violations the Hereford House was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Behind bar, one liquor bottle with 6 small winged insects, one liquor bottle with two small winged insects, and two liquor bottles with one winged insect in them. COS. PIC voluntary discard.
  • On can storage rack, 7 cans found to have seal integrity compromised from dents. COS, PIC voluntary discard.
  • In cooler under make table, raw in-shell eggs stored above ready to eat sour cream and butter. COS, PIC rearranged. In walk-in-cooler, raw T-bone steaks stored above ready-to-eat baked potato skins. COS, PIC rearranged. In reach-in-cooler raw octopus and tilapia fillets held above ready to eat buttermilk ranch and hot wing sauce. COS, PIC rearranged.
  • In make-table, bleu cheese held at 46F, held in make-table for greater than 6 hours. Everything else in make table held below 41F. COS, PIC voluntary discard. In refrigerated drawer of prep unit, cube steak held at 53F for greater than 6 hours. Everything else in make table held below 41F. COS, PIC voluntary discard.
  • In walk-in-cooler cooked ribs with a date marking of 3/7/20. Held over 7 days. PIC voluntary discard. In reach-in-cooler of prep table, container of potato cakes with a date marking of 3/8/20. Held over 7 days. COS, PIC voluntary discard. In reach-in-cooler of prep table, container of cooked short ribs with a date of 3/10/20, held over 7 days. COS, PIC voluntary discard.
  • In bar area, 15 small winged insects flying in area, landing on bottles. Observed by KDA58: In the salad prep area, 20 small winged insects observed on walls, clean dishes. Last pest control invoice date of 2/18/20
  • In dishwashing area, unmarked spray bottle of orange liquid. PIC stated it was degreaser. No leakage evident. COS, PIC labeled.
  • In ¬†kitchen area, five bottles of butane and one bottle of propane stored above ice cream freezer and clean plates. COS, PIC rearranged. In back dry-storage area, a plastic tub of chafing fuel canisters stored above coffee filters. No leakage evident. COS, PIC rearranged.
