Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 8/18/2020. As a result of that inspection, and due to the severity of the specific violations Luigi’s Italian Restaurant was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 4 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Located at the small make table in the kitchen, there were RTE PHFs cold holding above 41F. Sausage at 53, sliced tomatoes at 56, meat sauce at 54, clams at 52, and mussels at 51. Ambient of the make table was 54F. PIC said he had the unit repaired last week. He put the food in the make table, from the WIC at 10:00 this morning. He will discard all food at 2:00 P.M., and then discontinue use until repairs have been made. Not corrected on site.
  • The table mounted can opener had an accumulation of dried food debris on the blade. PIC did not know the last time it was cleaned. COS- Educated PIC, can opener cleaned.
  • No paper towels or other hand drying provisions at the salad prep handwashing sink. COS- Employee supplied paper towels.
  • Located in the back prep area, there was a 2 gallon sprayer of pink liquid with no labeling. PIC said it was degreaser. COS- Educated PIC, sprayer labeled.
